Chef Talo and his 2 favorite elements; Fire and Snow….

Born and raised in Buenos Aires, Talo grew up in a large house animated by a steady stream of neighbors and friends, and hosting big family gatherings.

Meals in Argentina are not simply for eating — they are for talking, connecting, coming together. They are times of sharing and communion.

He came circuitously to the culinary world, cooking for friends on the weekends until he visited Aspen in 2004 and got his first cooking job at a local seafood restaurant. This inspired him to use his degree in International Relations and enrolled at the Instituto Argentino de Gastronomia (the Argenintine Institute of Gastronomy) to study in Buenos Aires during the summer in the northern hemisphere and spend winters working in Aspen.

After several years exploring different cuisines, he opened his own restaurant in Buenos Aires — Babalu Resto. Featuring a fusion of mountain flavors and the freshest Argentinian ingredients. Four years later, Talo sold the Babalu and set his sights on moving to the U.S. in 2013.

After working with a variety of chefs around Aspen, Talo became the chef-in-residence at the Dancing Bear where he broadened his offerings to host events from small, intimate dinners to large-scale, public celebrations.

A regular contributor to Aspen Food & Wine Festival, he continues to cook for national politicians, movie stars, and his long list of favorite clientele.

Now passionate about sharing the sights and delights of his homeland, he has cultivated the Patagonia Experience to bring his guests to one of the most beautiful places in the world.
